Sweet Roll Dough

LARGE BATCH

  • 1/2 cup warm water
  • 2 pkg yeast
  • 1 1/2 cup lukewarm milk
  • 1/2 cup sugar
  • 2 tsp salt
  • 2 eggs
  • 1/2 cup soft unsalted butter
  • 7 to 7 1/2 cups flour

SMALL BATCH

  • 1/4 cup warm water
  • 1 pkg yeast
  • 3/4 cup warm milk
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 egg
  • 1/4 cup soft butter
  • 3 1/2 to 3 3/4 cups flour

Recipe:

  1. Dissolve yeast in water. Add milk, sugar, salt, egg, shortening and 1/2 of the flour.
  2. Mix until smooth. Add enough flour to make a stiff dough. Knead 5 minutes
  3. Let rise in greased bowl until double, about 1 1/2 hours
  4. Punch down
  5. Let rise again until almost double, about 30 minutes.
  6. Preheat oven to 400ยบ
  7. Shape into 1 1/2 in balls and place in a buttered cake pan, not touching. Let rise 15 to 20 minutes

Notes:

Bake 12 to 15 minutes

I now make this in the processor
