Persimmon Muffins

From Lucia’s restaurant, Minneapolis

Beforehand: 

  1. Preheat oven to 350º
  2. Spray 6 large or 12 regular muffin tins with Bakers Secret

Ingredients:

In a bowl COMBINE

  • 1 1/4 cup flour
  • 3/4 tsp baking soda
  • 3/4 tsp ground ginger
  • 3/4 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves

Recipe:

  1. Put into processor and process until smooth
  2. 1 stick softened unsalted butter
  3. 1/2 cup sugar
  4. Add and process until smooth
  5. Add 1/3 cup molasses
  6. 1 egg
  7. 2 fresh persimmons, pureed
  8. Add and process until smooth
  9. 1/4 cup hot coffee
  10. 2 TB sour cream
  11. 1 1/2 grated orange rind
  12. Add flour mixture and pulse until combined.

Notes:

Spoon mixture into muffin tins. Sprinkle with granulated sugar.

Bake for about 25 minutes
