Pancakes

Notes:

SMALL BOWL mix together LARGE BOWL mix together

Ingredients:

  • 1 cup flour 1/2 cup milk
  • 2 tsp baking powder 2 TB melted butter
  • 2 TB sugar 1 egg
  • 1/2 tsp salt

Recipe:

  1. Add dry to wet, mixing only to dampen. Add more milk to make a batter slightly thicker than heavy cream. Cook on an ungreased griddle or nonstick frying pan.
  2. Drop fruit ( blueberries, strawberries, raspberries, bananas, etc.) on pancakes just after placing them on the fire. Turn only once.

Variations:

  • Buttermilk: 1/2 tsp baking soda instead of powder. Substitute buttermilk for milk
  • Whole wheat: 1/3 cup whole wheat flour, 1/3 cup white flour. Substitute molasses for sugar
  • Oatmeal: Heat 1/2 cup milk, add 1/2 cup quick oatmeal. Let stand 10 minutes.Reduce flour to 2 TB
