My imitation of Kathleen’s muffins
In Advance:
- Preheat oven to 400ยบ
- Spray 1 large or 2 regular muffin tins with Bakers Secret (or butter and flour)
Ingredients:
- 1 cup sugar
- 1 stick unsalted butter, softened
- 2 eggs
- 2 cups flour
- 1/2 tsp salt
- 1 TB ground ginger
- 1 TB grated fresh ginger
- 1 TB minced crystallized ginger
- zest of one lemon
- 1 tsp baking soda
- 1 cup buttermilk
Recipe:
- Process sugar and butter until smooth Add eggs and process until smooth
- Add flour, salt, spices and lemon zest to butter mixture. Pulse to combine.
- Add baking soda to buttermilk in measuring cup and add to processor pulsing to combine well
- Spoon into muffin pans (or use ice cream scoop) and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
- Cool on rack.
Glaze:
Mix 3/4 cup sifted confectioners sugar with 1 TB fresh lemon juice to make a semi-thick glaze to drizzle over muffins when lukewarm.
