Sweet and Savory pork tenderloin

In Advance:

1 lb. pork tenderloin cut in 1 inch slices, patted dry

Ingredients:

Mix together:

  • 2 TB brown sugar
  • 3 minced garlic cloves
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp.Olive Oil
  • Mix together 1/2 cup dry white wine 2 TB red wine vinegar 1 tsp cornstarch 1/4 tsp oregano
  • 1/2  cup chopped pitted prunes
  • 1/4  cup chopped green olives
  • 2TB drained capers

Recipe:

  1. Dredge pork pieces  on all sides in sugar mixture.
  2. Brown in oil for three minutes per side. Remove to plate.
  3. Add wine mixture to pan and bring to boil.
  4. Put pork, prunes, olives and capers back in pan and stir.
