Ingredients:
- 2 heaping TBs flour
- S&P
- One 4 lb. Chicken cut into 8 pieces
- 1/4 cup extra virgin olive oil
- 4 to 5 sprigs fresh rosemary
- 6 cloves garlic peeled and sliced thinly
- 1 1/2 cup white wine
- 4 anchovy fillets
- 1/2 cup Kalamata olives with pits
- 3 ripe plum tomatoes peeled, seeded and coarsely chopped.
Recipe:
- Coat chickem with flour, S & P
- Fry in olive oil 5 minutesuntil golden.
- Turn, add rosemary and garlic. Add wine.
- When boiling add anchovies, olives and tomatoes.
Cover and cook over medium low heat for 15 to 20 minutes.
