Ingredients:
- 1/2 cup butter In the bowl of a food processor place the following and process until finely chopped:
- 1 medium onion peeled and quartered
- 1 clove garlic, peeled
- 1 stalk celery in chunks
- 1 tart apple, peeled and quartered
- 1/4 lb ham
- 1/2 bay leaf
- sprig parsley
- 1/4 tsp dry mustard
- 2 TB flour
- 1/2 tsp mace
- 2 tsp or more curry powder (Sun brand Madras powder in silver tin)
- 2 1/2 cups chicken broth
- 3 cups raw, cubed chicken
Recipe:
- Melt butter in large kettle. Add processed mixture with bay leaf, parsley and mustard and cook for eight minutes over medium heat,stirring.
- Stir in flour, mace, and curry powder and cook four minutes more.
- Add broth and simmer, covered, one hour. Rub mixture through a sieve and return to kettle.
- Add chicken and simmer until tender, about ten minutes longer.
Notes:
Serve hot with rice.
