Curried Chicken

In Advance:

Ingredients:

  • 1/2 cup butter In the bowl of a food processor place the following and process until finely chopped:
  • 1 medium onion peeled and quartered
  • 1 clove garlic, peeled
  • 1 stalk celery in chunks
  • 1 tart apple, peeled and quartered
  • 1/4 lb ham
  • 1/2 bay leaf
  • sprig parsley
  • 1/4 tsp dry mustard
  • 2 TB flour
  • 1/2 tsp mace
  • 2 tsp or more curry powder (Sun brand Madras powder in silver tin)
  • 2 1/2 cups chicken broth
  • 3 cups raw, cubed chicken

Recipe:

  1. Melt butter in large kettle. Add processed mixture with bay leaf, parsley and mustard and cook for eight minutes over medium heat,stirring.
  2. Stir in flour, mace, and curry powder and cook four minutes more.
  3. Add broth and simmer, covered, one hour. Rub mixture through a sieve and return to kettle.
  4. Add chicken and simmer until tender, about ten minutes longer.

Notes:

Serve hot with rice.
