For two people or four
Ingredients:
- 2 game hens ( 1 1/2 lbs or so With cranberries
- 1 TB olive oil
- S&P
- 1 small onion peeled and cut in half
- 1/4 cup dry sherry 1/4 cup dry white wine
- 1 TB red wine vinegar
- 1 TB honey 1TB honey
- 1/2 cup chicken broth 1/2 cup chicken broth
- 1 TB tomato paste 1 TB Tomato paste
- 21cups bing cherries, pitted 1 cup cranberries
- 1 TB butter
Recipe:
- Remove backbones and flatten
- Olive oil in baking pan
- Roll hens in olive oil
- S&P
- Roast breast side up with giblets and One Onion cut in half
- 40 minutes at 450 .Remove to platter. Cover with foil
- Skim fat
Notes:
Place pan on stove and bring to boil. Add sherry and vinegar and stir to dissolve particles baked onto pan. Strain into saucepan and bring to a boil. Reduce by half. Add honey, broth and tomato paste. Stir in any additional juices from the birds. Add cherries and bring to a boil. Cook about 3 minutes, stirring often. Add butter. Pour sauce over birds and serve
