Ingredients:
- 1 cup sugar
- 1 TB fresh lemon juice
- 1 inch piece of vanilla bean
- 6 medium pears, ripe, but firm, peeled, cored, and quartered
- 1 egg white, beaten
- 2 TB Eau de Vie de Poire( optional)
Recipe:
- Boil sugar with 2 cups water until dissolved, add lemon juice
- Poach pears in this liquid for about 10 minutes- until slightly soft
- Remove pears and puree
- Boil down liquid until it measures 1 cup
- Discard vanilla bean
- Combine boiled down poaching syrup and pear puree and cool
- Add beaten egg white and freeze as usual ( Donvier ice cream maker)
- Add Poire just before mixture is completly frozen
