Lemon Squares

In Advance: 

Preheat oven to 350º

Butter 9×9 inch pan

Ingredients:

Combine in processor:

  • 1/4 cup confectioners sugar
  • 1/2 cup cold unsalted butter
  • 1 cup flour

Pulse until crumbly. Pat firmly into pan and bake for 10 minutes

Mix:

  • 2 eggs beaten until frothy
  • 1 cup sugar
  • 2 TB fresh lemon juice
  • 1/2 tsp baking powder
  • 1 TB flour

Recipe:

  1. Spread on top of baked crust
  2. Bake 20 -25 minutes more.
  3. Sprinkle with confectioners sugar
  4. Wait until cool to cut
