In Advance:
Preheat oven to 350º
Ingredients:
- 3 eggs
- 1/4 tsp salt
- 1 1/2 cups sugar
- 1 1/2 tsp vanilla
- 3/4 cup milk
- 3 TB butter
- 1 1/2 cups cake flour
- 1 1/2 tsp baking powder
Recipe:
- Beat eggs until very light
- Beat in salt, sugar, and vanilla
- Microwave butter and milk together until butter melts
- Beat into egg mixture
- Mix and sift flour and baking powder
- Beat into egg-milk mixture
- Pour into 2 greased and floured 8 inch cake pans
- Bake for 25 to 30 minutes
Notes:
Frost with buttercream icing (use recipe on box of confectioners sugar 10x) flavored with 3 TB frozen orange juice concentrate, thawed.
B’s Notes:
As a surprise for Aunt Betty’s 80th birthday I made her mother’s cake. She tasted it and said, ” Oh, you’ve made Alice Gladdings cake.” “No,” I said, ” This is Granny’s hot milk cake.”
Alice Gladding, a childhood friend of Betty’s, was a home economist at URI. Apparently Granny had a reputation for being a lousy baker, except for her shortbread. Alice found this foolproof recipe and gave it to Granny. Apparently it was truly foolproof because my grandmother made it ( and no other cake ) all the time.
