In Advance:
Preheat oven to 375º
Ingredients:
- 3/4 cup flour
- 1 cup sugar
- 1 stick cold unsalted butter
- 1/4 cup candied ginger, chopped into 1/8 inch dice
- 1/4 cup lemon juice
- 1/4 cup water
- 3- 3 1/2 lbs pears, ripe but firm( about 6)
- 2 tsp cinnamon
- 1/2 tsp nutmeg, freshly grated
Recipe:
- Process flour, sugar, and butter to coarse crumbs. Squeeze with hands until not powdery.
- Mix lemon juice and water.
- Peel, core, and slice pears the long way. Toss with cinnamon and nutmeg.
- Turn pears into buttered 8 cup cassserole, drizzle with lemon juice mixture, sprinkle with ginger. Sprinkle on topping.
Notes:
Bake for one hour until tender, not mushy.
