Chocolate Cake or Whatever

This is a recipe from Chip’s secretary at Yale, Barbara Shanley. It’s the strangest cake recipe I’ve ever read (or tried) but it’s extremely good, easy and unususal. Make it for a grand, cholesteral-be-damned occassion like Thanksgiving or Christmas, or some huge dinner party.

In Advance: 

Preheat oven to 250.

Ingredients:

  • 18 ounces semi-sweet chocolate
  • 1 lb. unsalted butter
  • 1 TB instant coffee dissolved in 1 cup boiling water or one cup brewed coffee
  • 2 1/4 cups sugar

Recipe:

Melt together over low heat. Wisk until smooth.

  1. 9 eggs, well beaten
  2. Add to chocolate mixture and wisk until smooth. It’s OK if there are a few lumps, try to smooth out with wisk. Batter will be thin
  3. Pour into a greased 10-inch springform pan.
  4. Bake for 2 hours. Turn oven off and let cool in oven for 1 hour or more. FREEZE
  5. Slice into small servings -still frozen- and serve with whipped cream
