Cheese Cake

In Advance: 

Preheat oven to 350.

Ingredients:

Crust:

  • 1 1/4 graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup melted butter

Recipe:

  1. Combine ingredients and press into bottom and sides of 10 inch springform pan, bringing up sides only to seal joint between bottom and sides of pan.
  2. Bake for five minutes just to set crust.

Ingredients:

Filling:

  • 4 eight ounce packages of cream cheese at room temperature
  • 6 eggs
  • 1 1/2 cups sugar
  • 3 TB flour
  • 3 TB vanilla
  • 1 cup sour cream

Recipe:

  1. Start mixer and mix one pkg. of cream cheese until creamy. Add one package at a time, beating until creamy before adding the next. NO LUMPS.
  2. Add eggs one at a time. Add rest of ingredients.The secret is to beat the hell out of the mixture. Pour carefully into springform pan. Bake 1 hour. Top will brown (gas ovens tend not to brown) and rise and crack. Center will shake a bit when done. Remove and let set until totally cooled before removing sides.

This is the first cheesecake I ever made and I think it’s pretty good.
