Soft Polenta

Ingredients:

  • 1 1/2 c chicken stock
  • 1 1/2 c heavy cream
  • 1/2 tsp grated nutmeg
  • 1 1/2 tsp salt
  • 5 TB semolina
  • 5 TB fine grain polenta
  • 1/4 cup grated fontina cheese
  • 1/2 cup parmesean cheese

Recipe:

  1. Bring liquids to a boil in a heavy saucepan
  2. Add nutmeg and salt.
  3. Whisk in grains and cook over low heat for 20-30 minutes until grains are soft.
  4. Fold in cheeses.
