Mushroom Quiche

In Advance:

Preheat oven to 350º

Ingredients:

Filling:

  • 1/3 cup unsalted butter
  • 2 medium onions, chopped
  • 1 lb mushrooms, sliced
  • 1 TB flour
  • 1/2 cup light cream
  • 1 TB cognac or sherry
  • S & P

Recipe:

  1. Saute onion in butter until soft
  2. Add mushroms and saute 5 minutes
  3. Add flour, stirring until it disappears, then add cream. Bring to boil, stirring.
  4. Stir in booze and S&P. Let cool while making pastry.

Ingredients:

Pastry:

  • 2 cups flour
  • 1 1/4 tsp salt
  • 1/4 cup milk
  • 3/4 cup oil

Recipe:

  1. Mix oil and milk together and add to flour and salt. Mix with a fork.
  2. Roll out between sheets of waxed paper then fit into glass pie pan
  3. Blind bake for 15 minutes at 350º
  4. Add filling and bake for 30 minutes until puffed and golden
