Green Bean Salad

Ingredients:

  • 1/2 lb fresh green beans, ends cut off
  • 1 small white onion, very thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1 small garlic clove, pressed
  • 3 TB fresh lemon juice
  • Freshly ground pepper

Recipe:

  1. Bring a large amount of water to the boil. No salt.  Boil green beans until crisp- tender. Drain and plunge into a bowl of ice water to set color and cool. When cool, drain well.
  2. Add onions, olive oil. lemon juice and pepper.Toss well

Notes:

If you serve promptly the beans will remain bright green. Later they will turn brownish, but will still taste great.
