Coleslaw

Ingredients:

6-8 servings

  • 1 hard head cabbage  1 1/2 lb shredded to make 4 cups
  • 2/3 cup diced celery=
  • 1/2 cup grated carrot
  • 1/2 cup finely diced green pepper
  • 1 medium cucumber, peeled, seeded and finely diced
  • 1 small apple, peeled, seeded and finely diced
  • 1/4 cup finely diced scallions or mild yellow onion
  • 1/4 cup chopped fresh parsley

 

Initial flavoring:

Mix together:

  • 1/2 TB Dijon mustard
  • 2 TB wine or cider vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 tsp caraway or cumin seeds
  • 1/4 tsp ground imported bay leaves ( if available)
  • 1/4 tsp celery seeds
  • fresh pepper

Recipe:

  1. Toss with vegetables. Let stand for 20 to 30 minutes. Toss again, then drain.
  2. May be prepared ahead and refrigerated.
  3. When ready to serve, toss again and drain well.
  4. Mix in mayonnaise and sour cream to taste. ( 1/3 cup sour cream, 1’2 cup mayonnaise
