Carrots A La Crema

Ingredients:

  • 1 lb carrots
  • kosher salt
  • 2 TB butter
  • fresh white pepper
  • 1/2 cup heavy cream

Recipe:

  1. Cut off both ends of carrots. Do not scrape or peel them. Place in a large bowl of cold water to soak for 15 minutes.
  2. Heat a large quantity of water, salt added, in a flameproof casserole. When boiling, put the whole carrots in and boil until tender.
  3. Drain and place in a large bowl of cold water. When cool, slip off the skins. Cut into 1/8 inch slices
  4. Heat butter, add carrots and saute 5 minutes. Taste for S & P.
  5. Add cream, 1 TB at a time, stirring over low heat, until absorbed
