Cream of Broccoli Soup

 

Ingredients:

  • 1 medium onion, chopped
  • 3 TB butter
  • 1 10 oz. package broccoli, cooked and drained
  • 4 TB chopped parsley
  • 4 TB flour
  • 2 cups chicken broth
  • 2 cups half and half at room temperature
  • 1 tsp salt
  • 2 TB lemon juice
  • 1/8 tsp freshly grated nutmeg
  • lemon pepper, garlic salt and cayenne to taste
  • parsley, chopped

 Recipe:

  1. In heavy pot saute onion in butter until limp
  2. Add broccoli and parsley and simmer for 3 minutes. Stir to prevent scorching.
  3. Sprinkle the mixture with the flour and stir until the flour is absorbed, 2 minutes.
  4. Transfer mixture to blender. Add enough chicken broth to fill blender to 3/4 capacity and blend until liquified.
  5. Return the blended mixture to the pan and add remaining liquids and seasonings. Simmer for 5 minutes. Serve hot, garnished with parsley.
