Gazpacho Soup

 

Ingredients:

  • 2 cups cucumbers, chopped
  • 4 cups tomatoes, chopped
  • 1 1/2 green peppers, chopped
  • 3/4 cup onion, chopped
  • 1 clove garlic, minced
  • 2 cups beef broth, heated in microwave
  • 1/2 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 TB paprika
  • 1 TB kosher salt
  • 1 TB freshly ground pepper

 Recipe:

Mix all together. Let stand for a few hours at room temperature, then chill overnight.  That sounds easy doen’t it?
