Lemon Ginger Muffins

My imitation of Kathleen’s muffins

In Advance:

  • Preheat oven to 400ยบ
  • Spray 1 large or 2 regular muffin tins with Bakers Secret (or butter and flour)

Ingredients:

  • 1 cup sugar
  • 1 stick unsalted butter, softened
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp salt
  • 1 TB ground ginger
  • 1 TB grated fresh ginger
  • 1 TB minced crystallized ginger
  • zest of one lemon
  • 1 tsp baking soda
  • 1 cup buttermilk

Recipe:

  1. Process sugar and butter until smooth Add eggs and process until smooth
  2. Add flour, salt, spices and lemon zest to butter mixture. Pulse to combine.
  3. Add baking soda to buttermilk in measuring cup and add to processor pulsing to combine well
  4. Spoon into muffin pans (or use ice cream scoop) and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool on rack.

Glaze:

Mix 3/4 cup sifted confectioners sugar with 1 TB fresh lemon juice to make a semi-thick glaze to drizzle over muffins when lukewarm.
