In Advance:
1 lb. pork tenderloin cut in 1 inch slices, patted dry
Ingredients:
Mix together:
- 2 TB brown sugar
- 3 minced garlic cloves
- 3/4 tsp salt
- 1/4 tsp pepper
- 2 tsp.Olive Oil
- Mix together 1/2 cup dry white wine 2 TB red wine vinegar 1 tsp cornstarch 1/4 tsp oregano
- 1/2 cup chopped pitted prunes
- 1/4 cup chopped green olives
- 2TB drained capers
Recipe:
- Dredge pork pieces on all sides in sugar mixture.
- Brown in oil for three minutes per side. Remove to plate.
- Add wine mixture to pan and bring to boil.
- Put pork, prunes, olives and capers back in pan and stir.
