Ligurian Chicken

Ingredients:

  • 2 heaping TBs flour
  • S&P
  • One 4 lb. Chicken cut into 8 pieces
  • 1/4 cup extra virgin olive oil
  • 4 to 5 sprigs fresh rosemary
  • 6 cloves garlic peeled and sliced thinly
  • 1 1/2 cup white wine
  • 4 anchovy fillets
  • 1/2 cup Kalamata olives with pits
  • 3 ripe plum tomatoes peeled, seeded and coarsely chopped.

Recipe:

  • Coat chickem with flour, S & P
  • Fry in olive oil 5 minutesuntil golden.
  • Turn, add rosemary and garlic. Add wine.
  • When boiling add anchovies, olives and tomatoes.

Cover and cook over medium low heat for 15 to 20 minutes.
