Pear Sherbet

Ingredients:

  • 1 cup sugar
  • 1 TB fresh lemon juice
  • 1 inch piece of vanilla bean
  • 6 medium pears, ripe, but firm, peeled, cored, and quartered
  • 1 egg white, beaten
  • 2 TB Eau de Vie de Poire( optional)

Recipe:

  1. Boil sugar with 2 cups water until dissolved, add lemon juice
  2. Poach pears in this liquid for about 10 minutes- until slightly soft
  3. Remove pears and puree
  4. Boil down liquid until it measures 1 cup
  5. Discard vanilla bean
  6. Combine boiled down poaching syrup and pear puree and cool
  7. Add beaten egg white and freeze as usual ( Donvier ice cream maker)
  8. Add Poire just before mixture is completly frozen
