Scottish Shortbread

In Advance: 

Preheat oven to 350º

Ingredients:

  • 1 cup unsalted butte
  • 1/2 cup confectioners sugar 10
  • 2 cups unbleached flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Recipe:

  1. Process butter and sugar together until fluffy
  2. Add flour sifted with salt and baking powder, process until well combined
  3. Press into 9 inch square pan
  4. Prick dough in pretty pattern with tines of a fork, pushing the fork to the bottom of the pan
  5. Bake for 20 to 25 minutes. Top should be slightly colored, not golden
  6. Cut cake into small pieces still in the pan while hot. Let cool and remove pieces from pan.
