Ginger Pear Crisp

In Advance:

Preheat oven to 375º

Ingredients:

  • 3/4 cup flour
  • 1 cup sugar
  • 1 stick cold unsalted butter
  • 1/4 cup candied ginger, chopped into 1/8 inch dice
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 3- 3 1/2 lbs pears, ripe but firm( about 6)
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg, freshly grated

Recipe:

  1. Process flour, sugar, and butter to coarse crumbs. Squeeze with hands until not powdery.
  2. Mix lemon juice and water.
  3. Peel, core, and slice pears the long way. Toss with cinnamon and nutmeg.
  4. Turn pears into buttered 8 cup cassserole, drizzle with lemon juice mixture, sprinkle with ginger. Sprinkle on topping.

Notes: 

Bake for one hour until tender, not mushy.
