Giant Ginger Cookies

In Advance:

Preheat oven to 350°

Lightly grease two baking sheets

Ingredients:

  • 2 cups King Artur flour
  • 1 1/2 tsp baking soda
  • 1 tsp ground cloves
  • 1/2 tsp salt
  • 1/3 cup butter
  • 1/3 cup crisco
  • 1 cup sugar
  • 1 egg
  • 2 TB dark Karo syrup
  • 1 TB fresh ginger, grated

Topping:

  • 1 tsp ground cinnamon
  • 1/4 cup sugar

Recipe:

  1. In medium bowl wisk together flour, baking soda, cloves and salt
  2. Process butter, shortening, sugar, and egg until fluffy
  3. Add corn syrup , combining well
  4. Pulse in dry ingredients and ginger. Transfer to a bowl
  5. Refrigerate until easy to handle – about two hours.
  6. In small bowl combine sugar and cinnamon
  7. Form dough into 1 1/2 inch balls ( a small ice cream scoop makes this easy)
  8. Roll in cinnamon-sugar and place 2 inches apart on baking sheets

Notes:

Bake 15 to 18 minutes until lightly browm. Remove to rack to cool. Store covered.
