In Advance:
Preheat oven to 350.
Ingredients:
Crust:
- 1 1/4 graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup melted butter
Recipe:
- Combine ingredients and press into bottom and sides of 10 inch springform pan, bringing up sides only to seal joint between bottom and sides of pan.
- Bake for five minutes just to set crust.
Ingredients:
Filling:
- 4 eight ounce packages of cream cheese at room temperature
- 6 eggs
- 1 1/2 cups sugar
- 3 TB flour
- 3 TB vanilla
- 1 cup sour cream
Recipe:
- Start mixer and mix one pkg. of cream cheese until creamy. Add one package at a time, beating until creamy before adding the next. NO LUMPS.
- Add eggs one at a time. Add rest of ingredients.The secret is to beat the hell out of the mixture. Pour carefully into springform pan. Bake 1 hour. Top will brown (gas ovens tend not to brown) and rise and crack. Center will shake a bit when done. Remove and let set until totally cooled before removing sides.

This is the first cheesecake I ever made and I think it’s pretty good.
