Ingredients:
Dough:
- 2 cups flour
- 1 tsp salt
- 1 pkg 8 oz. cream cheese, softened
- 1 cup butter
- 1 TB milk
- 1 TB white vinegar
Recipe:
- Pulse flour with butter and cream cheese intil crumbly. Add milk and vinegar and pulse until mixture holds together. Divide until 4 balls and wrap in saran. Refrigerate for at least two hours.
Ingredients:
Filling:
- 12 oz dried apricots
- 2 cups water
- 1 1/2 cups sugar
Recipe:
- Cover apricots with water in saucepan. Add sugar and bring to the boil. Turn off heat and let cool in the liquid. Drain well.
- Preheat oven to 400º
- On lightly floured surface roll out each ball of dough 1/8 inch thick. Cut into 3 inch squares. Pat each apricot dry with a paper towel and place in the center of each square. Fold each corner into the center and pinch together TIGHTLY to seal. They will look like little pillows.
- Bake on ungreased cookie sheets for 15 minutes until golden. Remove to wire racks to cool
- Glaze: 3/4 cup confectioners sugar 10x mixed with 1 TB water
- Drizzle on slightly cooled cookies
Notes:
- Makes about 40 cookies
- These are really rich and delicious if you like apricots. They make a good christmas cookie. If you make them, you will remember them.
