Apricot Foldups

Ingredients:

Dough:

  • 2 cups flour
  • 1 tsp salt
  • 1 pkg 8 oz. cream cheese, softened
  • 1 cup butter
  • 1 TB milk
  • 1 TB white vinegar

Recipe:

  1. Pulse flour with butter and cream cheese intil crumbly. Add milk and vinegar and pulse until mixture holds together. Divide until 4 balls and wrap in saran. Refrigerate for at least two hours.

Ingredients:

Filling:

  • 12 oz dried apricots
  • 2 cups water
  • 1 1/2 cups sugar

Recipe:

  1. Cover apricots with water in saucepan. Add sugar and bring to the boil. Turn off heat and let cool in the liquid. Drain well.
  2. Preheat oven to 400º
  3. On lightly floured surface roll out each ball of dough 1/8 inch thick. Cut into 3 inch squares.  Pat each apricot dry with a paper towel and place in the center of each square. Fold each corner into the center and pinch together TIGHTLY to seal. They will look like little pillows.
  4. Bake on ungreased cookie sheets for 15 minutes until golden. Remove to wire racks to cool
  5. Glaze: 3/4 cup confectioners sugar 10x mixed with 1 TB water
  6. Drizzle on slightly cooled cookies

Notes: 

  • Makes about 40 cookies
  • These are really rich and delicious if you like apricots. They make a good christmas cookie. If you make them, you will remember them.
