Smugginsville Sensation

Ingredients:

  • 1/2 lb elbow macaroni
  • 2 TB olive oil
  • 1 large onion, chopped
  • 2 peppers, any color, chopped
  • 2 cloves garlic, minced
  • 1 lb lean hamburger
  • 4 cups canned tomatoes or tomato sauce
  • 1 tsp dried oregano
  • handful chopped parsley
  • Parmesean cheese

Recipe:

  1. Boil macaroni in a large pot of salted water, drain well.
  2. Saute onion in olive oil until tender, add peppers and garlic and saute for 5 minutes. Add to drained pasta.
  3. Brown hamburger until thoroughly cooked. Drain off fat and add meat to pasta mixture. Add tomatoes or sauce. Mix well. Taste for S&P.
  4. Pour into greased casserole. Sprinkle with grated cheese. Bake at 400º until hot and bubbly, about  45 minutes
