Ingredients:
- 1/2 lb elbow macaroni
- 2 TB olive oil
- 1 large onion, chopped
- 2 peppers, any color, chopped
- 2 cloves garlic, minced
- 1 lb lean hamburger
- 4 cups canned tomatoes or tomato sauce
- 1 tsp dried oregano
- handful chopped parsley
- Parmesean cheese
Recipe:
- Boil macaroni in a large pot of salted water, drain well.
- Saute onion in olive oil until tender, add peppers and garlic and saute for 5 minutes. Add to drained pasta.
- Brown hamburger until thoroughly cooked. Drain off fat and add meat to pasta mixture. Add tomatoes or sauce. Mix well. Taste for S&P.
- Pour into greased casserole. Sprinkle with grated cheese. Bake at 400º until hot and bubbly, about 45 minutes
