Ingredients:
- 3 zucchini – preferably small ones- sliced 1/4 inck thick or thinner, unpeeled
- 1 mild onion- very thinly sliced in rings
- 1/4 cup grated parmesean cheese
- 2 TB unsalted butter cut into tiny bits
- Salt and pepper
Recipe:
- Butter covered shallow casserole.
- Make a single layer zucchini in concentric circles, cover with a layer of onion rings, dot with butter, S&P, and a sprinkling of parmesean.
- Continue with subsequent layers.The top layer should look pretty… a nicely arranged pattern. No onions on top, just butter, S&P and parmesean.
- Bake, covered, at 350 for one hour.
Notes:
This “recipe” is a concept recipe. After you’ve made it once you’ll understand how YOU like it- more or less onions, cheese etc. Can be made in a large roasting pan for 25 people. Very versatile. Can be built the day beforeĀ and stored, tightly covered with saran, in the fridge and cooked the day of your gathering, the ingredients are always available, and cheap. Most people who don’t like zucchini (like me) like it. It’s good.
