Ingredients:
- 1 large onion
- 3 chopped garlic cloves
- 1/3 cup oil
- 3 small zuchinni
- 1/2 lb. green beans
- 3 carrots peeled and cut into small pieces
- 3 diced potatoes
- 1/4 cup lentils
- 8 oz. V-8 juice
- 1/2 tsp basil
- S & P
- handful chopped parsley
Recipe:
- Brown onion and garlic in oil
- Add veggies and brown quickly
- Add lentils and V-8 and basil
- Cover and simmer 45 minutes or until lentils are tender. Add more V8 or water if it seems dry.Taste for S&P. Fold in chopped parsley
