Greek Vegetable Stew

Ingredients:

  • 1 large onion
  • 3 chopped garlic cloves
  • 1/3 cup oil
  • 3 small zuchinni
  • 1/2 lb. green beans
  • 3 carrots peeled and cut into small pieces
  • 3 diced potatoes
  • 1/4 cup lentils
  • 8 oz. V-8 juice
  • 1/2 tsp basil
  • S & P
  • handful chopped parsley

Recipe:

  1. Brown onion and garlic in oil
  2. Add  veggies and brown quickly
  3. Add lentils and V-8 and basil
  4. Cover and simmer 45 minutes or until lentils are tender.  Add more V8 or water if it seems dry.Taste for S&P. Fold in chopped parsley
