Ingredients:
6-8 servings
- 1 hard head cabbage 1 1/2 lb shredded to make 4 cups
- 2/3 cup diced celery=
- 1/2 cup grated carrot
- 1/2 cup finely diced green pepper
- 1 medium cucumber, peeled, seeded and finely diced
- 1 small apple, peeled, seeded and finely diced
- 1/4 cup finely diced scallions or mild yellow onion
- 1/4 cup chopped fresh parsley

Mix together:
- 1/2 TB Dijon mustard
- 2 TB wine or cider vinegar
- 1 tsp salt
- 1 tsp sugar
- 1/4 tsp caraway or cumin seeds
- 1/4 tsp ground imported bay leaves ( if available)
- 1/4 tsp celery seeds
- fresh pepper
Recipe:
- Toss with vegetables. Let stand for 20 to 30 minutes. Toss again, then drain.
- May be prepared ahead and refrigerated.
- When ready to serve, toss again and drain well.
- Mix in mayonnaise and sour cream to taste. ( 1/3 cup sour cream, 1’2 cup mayonnaise
