Ingredients:
- 1 medium onion, chopped
- 3 TB butter
- 1 10 oz. package broccoli, cooked and drained
- 4 TB chopped parsley
- 4 TB flour
- 2 cups chicken broth
- 2 cups half and half at room temperature
- 1 tsp salt
- 2 TB lemon juice
- 1/8 tsp freshly grated nutmeg
- lemon pepper, garlic salt and cayenne to taste
- parsley, chopped
Recipe:
- In heavy pot saute onion in butter until limp
- Add broccoli and parsley and simmer for 3 minutes. Stir to prevent scorching.
- Sprinkle the mixture with the flour and stir until the flour is absorbed, 2 minutes.
- Transfer mixture to blender. Add enough chicken broth to fill blender to 3/4 capacity and blend until liquified.
- Return the blended mixture to the pan and add remaining liquids and seasonings. Simmer for 5 minutes. Serve hot, garnished with parsley.
