Cucumber Tomato and Avocado Soup

 

Ingredients:

  • 4 TB butter
  • 1 cup chopped onion
  • 4 TB flour
  • 4 cups peeled seeded and chopped tomatoes
  • 4 cups peeled seeded and chopped cucumbers
  • S & P
  • 4 cups chicken or beef broth
  • 1 ripe unblemished avocado
  • 1 cup heavy cream

 Recipe:

  1. Melt  butter and cook onion until translucent. Sprinkle with flour and cook until it disappears. Add tomatoes, stirring rapidly, add cucumbers, S&P, Then add broth. Simmer covered for 25 minutes
  2. Puree. Stir in cream. Chill if serving cold
  3. Just before serving peel avocado, chop finely.and add to soup
