Ingredients:
- 1 cup finely grated turnip (processer)
- 1 cup well washed leeks, finely sliced
- 1 cup mild onions, thinly sliced
- 1/3 cup unsalted butter
- 2 cups reisling ( not a sweet one)
- 2 cups beef broth -low salt
- 1/2 cup heavy cream
Recipe:
- Cook vegetables in butter VERY slowly until softened. Do not brown.
- Add wine and simmer until vegetables are very soft, stirring constantly.
- Blend in pan with Braun hand blender, or in processor, not completely- leave some texture
- Stir in beef broth and simmer 5 minutes.
- Stir in heavy cream, season with S&P, simmer 5 minutes more.

Serve with good bread.
