Reisling Soup

Ingredients:

  • 1 cup finely grated turnip (processer)
  • 1 cup well washed leeks, finely sliced
  • 1 cup mild onions, thinly sliced
  • 1/3 cup unsalted butter
  • 2 cups reisling ( not a sweet one)
  • 2 cups beef broth -low salt
  • 1/2 cup heavy cream

Recipe:

  1. Cook vegetables in butter VERY slowly until softened. Do not brown.
  2. Add wine and simmer until vegetables are very soft, stirring constantly.
  3. Blend in pan with Braun hand blender, or in processor, not completely- leave some texture
  4. Stir in beef broth and simmer 5 minutes.
  5. Stir in heavy cream, season with S&P, simmer 5 minutes more.

 Notes:

Serve with good bread.
